餐饮部20xx年工作总结

玉兔辞岁,金龙迎春。转眼间我们迎来了水口天地酒店开业以来的第一个年关。过去的几个月里,在各位领导的带领下,大家团结协作,使得水口天地从无到有,快速成长,形成了“同奋斗、共获益、齐发展”的积极态势。前途一片光明,然而道路却是曲折的。由于目前餐饮行业环境相对低迷,如何搞好酒店的经营管理是业内普遍存在的问题。作为一个新兴建的酒店,水口天地面临着极其严峻的考验。为使餐饮部在新的一年可以稳步发展,取得更高的经济效益和社会效益,现将本年度主要工作情况总结如下:

一、餐饮经济指标完成情况差强人意

本年度共接待会议及用餐50余场,餐饮部营业额为538795元。与业内其他酒店相比,营业额相对较低。但介于酒店是新开业,知名度与品牌效益不高,此业绩也算是差强人意。我们有信心,在未来的一年里,酒店效益将会越来越好。

二、餐饮接待任务满意度普遍较高

水口天地酒店位于素有“三省通衢”的长兴县徽州庄境内,三面环山,环境优美,交通便利。酒店装潢豪华、典雅大气,用餐环境舒适。现拥有可容纳150人就餐的宴会厅一间,豪华包厢3间,包间均采用的高档红木家具。会议接待功能也十分完善,配置了一流的音响设备。多功能会议室可容纳60人,小会议室可容纳15-20人的小型会议,在多功能厅门口还配备了舒适优雅,视野开阔的茶歇厅。由于酒店拥有卓越的硬件设施,综合接待能力也很高。截止20xx年底,已接待了县接待办、经信委、旅游局、林业局、农业局、长广集团、永兴公司等各大单位各类型会议及用餐服务。并获得了龚省长、李市长、南京军区首长、章书记、吕县长等各位领导的好评。

三、餐饮部展开各类规章、技能、知识等培训工作,员工积极参加

为了提高餐饮部员工的服务质量与自身素质,部门组织员工定期进行各类规章制度、服务技能、消防知识等培训。如每周一次的管理培训、安全卫生培训,每周两次的服务知识培训、服务技能培训。为达到培训预期效果,餐饮部领导制定了一整套培训制度。首先明确培训内容的目的性和实用性;其次建立了系统的培训计划;最后在实行培训计划时,采取理论结合实际、以老带新的方法落实培训内容,并定期进行考核工作。各位员工也都积极配合,踊跃参与,学习氛围浓厚。

四、稳抓员工政治思想工作,增强了员工的创新意识

企业管理往往讲究以人为本,所以稳抓员工的政治思想工作是酒店人性化管理的重中之重。这一点我们酒店做的还是很好的。例如组织员工参观了20xx年长兴县酒店服务节能比赛。这使餐饮部员工即了开阔了眼界,又提高了服务技能,更深化了员工的创新意识。此类活动的举行是企业文化的萌芽,深受员工喜爱。

五、餐饮部员工内部团队意识强,但各部门之间协调合作有待加强

餐饮部大多数员工在酒店建立初期就已经入职,在酒店开荒过程中建立了牢固的革命友谊。所以在部门内部,员工的团队精神往往比较强。酒店行业分工细,环节多,接待工作的完成有赖于各部门之间的协调合作,然而现阶段各部门之间的协调工作并不乐观。出现问题,各部门之间总是相互责怪,推搪,导致了在接待过程中出现了一些脱节和不协调现象。

六、各类规章制度已见雏形,但仍需更改完善

酒店按照《员工手册》规范员工工作标准。并结合餐饮工作情况,制定了餐饮部的人员编制、各岗位职责,以及具体操作规范等。这些规范虽已见雏形,却仍需按照实际情况做出更改和完善,如绩效工资制度,考勤制度等。

七、员工慵懒散漫,服务意识欠缺

餐饮服务工作细节繁琐,体力消耗大,久而久之会令服务人员感觉枯燥乏味,力不从心。又因为酒店本身接客量并不多,大部分时间属于歇业状态。养成了餐饮部的员工消极怠工,慵懒散漫的工作习惯;另外由于部分员工在入职前未从事过服务行业,入职后也未经过正规系统的培训,所以服务意识不强,有待加深。

八、厅面人手相对短缺,急缺专业管理人才

虽然能够比较圆满的完成接待任务,但厅面的服务质量并达不到标准。餐饮部人员少,管理的范围广、内容多,经常造成人员相对短缺的状况;尤其缺乏有经验的专业管理人才,带领部门员工系统的、彻底的完善落实各项规章、培训等工作。

九、物资保管工作做的不到位,出现遗失现象

餐饮部的物资保管工作做的很差,责任制落实不到位,经常出现损坏、偏差和遗失现象。

在明年的工作中,我们餐饮部将继续发扬团结协作,共同进取的开荒精神,完善各类规章制度,改变懒散的工作态度,以最好的精神面貌迎接新的挑战。具体工作计划如下:

一、继续开展培训工作,着重培训餐饮服务中的规范化和个性化,同时注意员工服务意识培养。

二、完善个人绩效考核制度等各类规章制度,将餐饮部员工每日工作完成情况纳入考核范围

三、持续稳抓员工的政治思想工作,坚持以人为本,因材施治。

四、做好安全管理,保障人员和财产的安全;同时落实物资保管责任制,减少部门物资的损坏、偏差和缺失。

五、加强各部门之间的协作精神,深化全局观念,密切配合相关各部门做好接待和日常工作。

六、提高现有员工素质的同时引进有经验的优秀员工,以提高整体员工素质水平

七、努力做好接待工作,做到零投诉。并为酒店创造更高的经济效益。
